اولا العجينة ثقيلة، بدلا من عملها قوارب صغيرة كان يمكن اما مطها لتصبح طويلة، او عملها بشكل دائري لتصبح نحيفة، او انقاص وزن العجينة والاعتناء بعملية التخمير اكثر.
ثانيا، فطيرة الجبنة العكاوي مليااانة حبة سودا، حتى انه يمكن ان تطلق عليها فطيرة حبة سوداء مع شوي جبن! اختاروا النوع الخالي من الحبة السودا، ويمكن رش القليل من الحبة السودا عليها من الخارج.
